Menus are designed around what’s available seasonally, cherry-picking the best of what outstanding Lancashire suppliers grow and always on the hunt for foraged ingredients. Championing sustainable practice is important and by searching for herbs, fruits and roots in the wild it helps to create fresh, flavourful dishes.
