Nigel Haworth brings together an exceptional line-up of chefs for Fusion 3

Celebrated Lancashire chef Nigel Haworth is bringing together an exceptional line-up of chefs for Fusion 3, a week-long celebration of culinary collaboration at his renowned restaurant, The Three Fishes in Mitton, from 13th–18th October 2026.

Following the success of previous Fusion events, Nigel is once again opening the doors of his kitchen to some of the most exciting and distinctive chefs working in Britain today. Each evening will see a different chef join Nigel to create a unique dining experience, bringing their own culinary heritage, personality and style to The Three Fishes.  Fusion 3 is proudly supporting Action Against Hunger.

THE FUSION 3 LINE-UP

Tuesday 13th October – Kirk Haworth

Nigel’s son, Kirk Haworth, has established an impressive reputation in his own right. Chef and co-founder of Plates London, Kirk made history when the restaurant became the first fully plant-based restaurant in the UK to be awarded a Michelin star. His cooking is rooted in classical technique while showcasing innovative, thoughtful and entirely plant-based cuisine.

Wednesday 14th October – Nigel Haworth

Nigel needs no introduction. A hugely respected chef and one of Lancashire’s great culinary champions, Nigel has spent decades celebrating the county’s exceptional produce and putting Lancashire firmly on the gastronomic map. For his Fusion evening, guests can expect Nigel’s distinctive, ingredient-led cooking and a celebration of the very best seasonal produce.

Thursday 15th October – Sabrina Gidda

Acclaimed chef, author and food writer Sabrina Gidda brings her vibrant and creative style to The Three Fishes. A two-time Roux Scholarship finalist and familiar face on Great British Menu, Sabrina draws inspiration from her Punjabi heritage and her experience in some of the UK’s leading kitchens to create bold, contemporary dishes packed with flavour.

Friday 16th October – Tom Parker, The White Swan

Lancashire-born Tom Parker, Head Chef of The White Swan at Fence, joins Nigel for an evening celebrating the produce and landscape of their home county. Tom began his career at Northcote and has developed a style of cooking that is deeply connected to Lancashire, its producers and its seasons.

Saturday 17th October – Ping Coombes

Two-time MasterChef champion Ping Coombes brings the vibrant flavours of her Malaysian heritage to Mitton. Born and raised in Ipoh, Malaysia, Ping draws inspiration from her mother’s cooking to create modern dishes rooted in Malaysian tradition. In 2022 she became the first-ever MasterChef Champion of Champions, adding to her 2014 MasterChef title.

FUSION 3 COMES TO A MUSICAL CLOSE

The week concludes on Sunday 18th October with Jazz at The Three Fishes, bringing together great food, live music and the relaxed atmosphere of a Sunday evening at the restaurant.

Nigel says: “Fusion is all about bringing chefs together, sharing ideas and seeing what happens when different culinary influences meet. I’m incredibly excited about this year’s line-up.
