La Locanda are honoured to welcome Antonio Cabibi from the Folonari Family Estate to La Locanda for a five-course Tuscan dinner with wine tasting.
The Folonari family have been making wine for more than two hundred years. In 1971 they acquired Tenuta Nozzole in Greve in Chianti, an estate dating back to 1300, where Sangiovese is the absolute protagonist across 90 hectares of vineyard rising from 150 to 300 metres.
Antonio will guide you through four wines from the estate, a fresh, mineral Chardonnay; a Chianti Classico of sweet, spicy character; a Riserva with delicate notes of cocoa and incense; and a Vin Santo of remarkable balance.
Chef Maurizio has built the menu around them: Pappa al Pomodoro to open, Pasta alla Buttera with sausage and pancetta ragù, Stracotto alla Fiorentina, slow-cooked in Chianti Classico, and Ricciarelli di Siena to finish.
